PIN W.Loch Wheat Blueberry Pancakes

Large, pillow-soft pancakes full of juicy berries and delicious all round? I mean, what is NOT to love!

You know I'm a pancake queen. I love to get creative with flavors like vegan brownie pancakes or buckwheat pancakes with roasted peaches. But when it comes down to it I'm a really simple girl and blueberry pancakes (or blueberry pancakes!) Will always have my heart.

Especially this one, because this recipe comes from my aunt Lonnie, who is no longer with us, but was the BEST cook. She made them for me when I grew up (I only made them whole wheat!) And they remind me of my childhood! You actually lit the cottage cheese pancakes because I thought if ricotta cheese makes pancakes amazing (it does!), Why not cottage cheese?

Health benefits of whole grains

We all know that whole wheat flour is "better" than white all-purpose flour, but why is that? Here are some of the benefits of eating whole grains:

  • Nutrient-tight: Whole grains contain a variety of vitamins and minerals such as protein, fiber, B vitamins, antioxidants and trace vitamins to keep your body running well.
  • Disease control properties: Whole grain products not only help fight diseases such as heart disease, cancer and diabetes, they also work against them!
  • Support Digestion: You keep things moving!

they cook thick, fluffy and perfect, I'm all about it! Here are some that I have up my sleeve when it comes to that Best blueberry pancake recipe::

  1. Use ricotta cheese: The extra fat makes them super fluffy and tender!
  2. Do not mix the dough. You should see small chunks of flour that keep the pancakes airy and fluffy!
  3. Turn the pancakes only once per side: If you turn too much, the pancakes can overcook and become less tender!
