Large, pillow-soft pancakes full of juicy berries and delicious all round? I mean, what is NOT to love!

You know I'm a pancake queen. I love to get creative with flavors like vegan brownie pancakes or buckwheat pancakes with roasted peaches. But when it comes down to it I'm a really simple girl and blueberry pancakes (or blueberry pancakes!) Will always have my heart.

Especially this one, because this recipe comes from my aunt Lonnie, who is no longer with us, but was the BEST cook. She made them for me when I grew up (I only made them whole wheat!) And they remind me of my childhood! You actually lit the cottage cheese pancakes because I thought if ricotta cheese makes pancakes amazing (it does!), Why not cottage cheese?

Healthy Blueberry Pancake Ingredients

If you open a lot of pancakes on a Sunday morning, adding blueberries goes without saying. Blueberry pancake recipes are such a classic in my house and I love that! Blueberries are seriously as good in all types of breakfast foods as Healthy wholegrain blueberry muffins and Blueberry gluten-free Greek yogurt wafflesTherefore adding to your pancakes is a MUST! Here are the ingredients you need:

  • White wholemeal flour
  • Granulated sugar
  • salt
  • baking powder
  • Eggs
  • Low-fat ricotta cheese
  • Pompeian olive oil
  • Fresh or frozen blueberries

How to make wholegrain blueberry pancakes with ricotta

Simple shopping list, am I right? You may even have all of these ingredients in your pantry, refrigerator, and freezer. If so, let's get started!

Spray a frying pan with cooking oil and heat to medium heat.

Mix

Mix the flour, sugar, salt and baking powder in a medium bowl and set aside. Mix the eggs, ricotta cheese and olive oil well in another bowl. Add the wet mixture to the dry mixture and stir until just combined. The dough becomes lumpy. Carefully fold in the blueberries.

Drop the batter in 1/4 cup portions onto the heated, oiled frying pan and spread it carefully, but you want to keep it nice and thick. Cook for 3-4 minutes until golden brown. Turn around and cook for another 1-2 minutes.

Enjoy

When I cook pancakes, I know that I want ALL TIPS and tricks to make them the fluffiest and best they can be! Pancakes light up by themselves, but if I can

they cook thick, fluffy and perfect, I'm all about it! Here are some that I have up my sleeve when it comes to that Best blueberry pancake recipe::

  1. Use ricotta cheese: The extra fat makes them super fluffy and tender!
  2. Do not mix the dough. You should see small chunks of flour that keep the pancakes airy and fluffy!
  3. Turn the pancakes only once per side: If you turn too much, the pancakes can overcook and become less tender!

How to freeze wholegrain blueberry pancakes with ricotta

Did you make too many pancakes for your brunch? Or maybe you WANT to make a ton because you want to prepare for the busy mornings on the way to school or work!

Pancakes are a great meal to prepare as they freeze well and can be easily pulled out of the freezer and reheated! All you have to do is stack the pancakes separated by thin sheets of parchment paper, then put them in a zippered freezer bag and put them in the freezer! The pancakes freeze well, as they don't stick together in this way, and they'll last up to a month in your freezer! Hello simple, delicious breakfast!

Thanks to ricotta cheese, these wholegrain blueberry pancakes are large, fluffy and creamy! Simple, healthy and full of protein!

ingredients

  • 1 Cup White wholemeal flour 120 g
  • 1/4 Cup Granulated sugar
  • 1/2 TL salt
  • 1 tablespoon baking powder
  • 4th Eggs
  • 1 Cup Low-fat ricotta cheese
  • 3rd tablespoon Pompeian olive oil
  • 1 Cup Blueberries fresh or frozen

  1. Spray a frying pan with cooking spray and heat to medium heat

  2. Mix the flour, sugar, salt and baking powder in a large bowl. Put aside.
  3. Mix the eggs, ricotta cheese and olive oil well in a medium bowl.

  4. Add the ricotta mixture to the flour mixture and stir until just moistened. The dough gets a little thick and lumpy. Carefully fold in the blueberries.

  5. Let the dough drop onto the heated frying pan with a short 1/4 cup. Use your spoon to spread out easily, but you want them to be nice and thick.

  6. Cook for about 3-4 minutes until golden brown and the edges become firmer. Rotate and repeat for another 2-3 minutes.

  7. Top with all the syrup and DEVOUR!
