  • salt
  • Dried basil
  • 2nd Oz Goat cheese
  • 2nd TL olive oil
  • 1 Cup Ripe strawberries, roughly chopped and tightly packed (180g)

  • 1 TL honey
  • Fresh basil, for garnish

manual

  • Preheat your oven to 350 degrees.

  • Place the chicken between 2 layers of parchment paper and use a rolling pin or meat mallet or knock it out thinly. Sprinkle both sides with salt and dried basil (no measurement required)

  • Place 1/2 ounce of cheese at the end of each breast and roll it up firmly with toothpicks to secure it if necessary.

  • Heat the oil in a large, ovenproof pan over high heat. Fry the chicken breasts on both sides until golden brown, about 1-2 minutes per side.

  • Place in the oven and bake until an instantly readable thermometer reads 165 degrees Fahrenheit for about 15 to 20 minutes, which were inserted into the actual chicken breast

  • While the chicken is baking, mix the strawberries and water in a large saucepan and bring to a boil. After cooking, reduce the heat to medium and let simmer until the strawberries crumble and the sauce slightly thickens for about 7-10 minutes. Remove from the heat and stir in the vinegar and honey.

  • Serve the chicken sauce and garnish with basil and additional balsamic if desired.

  • Devour
