I could eat chicken breast stuffed with goat cheese, chicken breast stuffed with balsamic goat cheese, or all bagel chicken for EVERY MEAL.
BUT it's almost summer, which means we have to get a little fruity and fresh, right?
Enter: the best strawberry sauce on a creamy, cheese-filled chicken that will blow your mind!

I can really feel the change of seasons through the meals I make. I love putting fresh, colorful elements in foods that I often enjoy, like chickens, to spice them up a bit and make you excited for dinner! Strawberry Chicken Ingredients
Like many of my recipes, this one uses healthy, healthy ingredients that you can pronounce and combines them into a delicious meal. This has become a personal FAVE of mine because it has the taste, the protein, the sweetness, the saltiness, the wealth – basically it ticks off all the items on my list and is also good for you! Here's what you need to get from the store to prepare this delicious meal:
- Chicken breast
- Dried basil
- Goat cheese
- olive oil
- Fresh strawberries, roughly chopped
- Good quality balsamic vinegar
- Fresh basil for garnish
Can you make the sauce in advance?
Something that most people can identify with is the bustle of life. I mean, sometimes it feels like you don't have time to cook a meal for your family from scratch! This is where meal preparation comes into play. Preparing some elements of a meal in advance is one of my favorite things to do. It saves time when you're in a hurry after work or school and your crew is HANGRY! The good news ?! These Strawberry and Chicken Marinade can be easily put together in advance, which saves you time when you put this meal together! Simply cook the sauce during the day or night before enjoying this meal, and then follow the cooking instructions as usual!
Side dishes can really add a bit of pizzazz to a meal, right? This amazing chicken dish is FABULOUS by itself, but if you want to add a few pages to complement it and bring it together as a meal, give it a try! Servings 4th People
- 1 lb Chicken breast (about 4 small breasts)
- Dried basil
- 2nd Oz Goat cheese
- 2nd TL olive oil
- 1 Cup Ripe strawberries, roughly chopped and tightly packed (180g)
- 4th tablespoon water
- 1 TL Good quality balsamic vinegar (It should be fat and not very few calories)
- 1 TL honey
- Fresh basil, for garnish
Preheat your oven to 350 degrees.
Place the chicken between 2 layers of parchment paper and use a rolling pin or meat mallet or knock it out thinly. Sprinkle both sides with salt and dried basil (no measurement required)
Place 1/2 ounce of cheese at the end of each breast and roll it up firmly with toothpicks to secure it if necessary.
Heat the oil in a large, ovenproof pan over high heat. Fry the chicken breasts on both sides until golden brown, about 1-2 minutes per side.
Place in the oven and bake until an instantly readable thermometer reads 165 degrees Fahrenheit for about 15 to 20 minutes, which were inserted into the actual chicken breast
While the chicken is baking, mix the strawberries and water in a large saucepan and bring to a boil. After cooking, reduce the heat to medium and let simmer until the strawberries crumble and the sauce slightly thickens for about 7-10 minutes. Remove from the heat and stir in the vinegar and honey.
Serve the chicken sauce and garnish with basil and additional balsamic if desired.
