PEN Low Carb Keto Shrimp Zucchini Boats on the Grill
Is it just me or are grilled shrimp just the epitome of summer food?
I just want to eat Shrimp Avocado Salad with Watermelon, Watermelon Feta Salad with Cajun Shrimp, and THOSE little vegetable boats all summer, and I would be delighted with anything FOOD.
I also have to mention that I'm not a "low carb person" but I'm digging this SO SO SO. Grilled zucchini is especially summery too and then there are those tart bursts of fresh lemon and that herbaceous (is that a word?) That doesn't even make me a little angry that there are no carbohydrates here.
But could make some more air fried potatoes for the side 😉

Shrimp Zucchini Boats Ingredients
This is one of those recipes that will make you feel so good! It's filled with nutritious proteins and vegetables, and it's perfectly seasoned for a touch of flavor! You won't miss out on the carbohydrates with this satisfying meal. Here's what you need to do to make this a reality:
- olive oil
- Cayenne pepper
- Onion, roughly chopped
- Cauliflower flowers, cut into bite-sized pieces
- Fresh lemon juice
- Fresh basil, chopped
- Fresh prawns, peeled and deveined
- Lemon peel
What type of shrimp is best for zucchini shrimp boats
When preparing dinner for your crew, it's fun to be creative with ingredients and seasonings to bring out that flavor and keep your meals new and exciting! For this recipe, I recommend using fresh shrimp. However, if you only have frozen shrimp this works great too. Be sure to fully thaw it before cooking!
How to Make Shrimp Zucchini Boats
You might think that with a flavorful, unique, and delicious recipe it must be difficult to make. NEE! This recipe is easy to put together and a homemade taste! Here's how:
Place your grill basket on the grill and preheat it over high heat for about 10 minutes.
Prepare the zucchinis
Cut your zucchini in half lengthwise and scrape out some of the inside to create a boat. Leave some of it as the zucchini will soften as it cooks. Brush the zucchini with olive oil and sprinkle with salt and a little cayenne pepper.
Put the chopped onions and sliced asparagus in a large bowl. Pour on the oil, add the garlic and season with salt and pepper. Toss the vegetables to coat them evenly.
Grill the vegetables
Place the onions and asparagus in the grill basket and lower the heat to medium high. Place the zucchini cut side down on the grill next to the basket. Let the vegetables cook for about 10 minutes, until the vegetables are charred and grill marks have formed. Turn the zucchini halfway over while stirring the vegetables. After cooking, cover the vegetables and set aside.
Rice the cauliflower
Put the cauliflower in a large food processor and process until it crumbles and resembles rice. Put it in a large microwaveable bowl and heat it in the microwave for 5-6 minutes or until tender.
Grill the prawns
Bring the grill back to high heat. Throw the prawns with oil, honey, pepper and salt, making sure everything is evenly coated. Cook them until they are nicely charred.
Cut the onion and asparagus into cubes and add to the cubed cauliflower. Add the remaining olive oil, fresh lemon juice and basil. Season with salt and pepper and add the mixture to the zucchini. Place the prawns on top and garnish with lemon zest. Serve and DISCOVER this Shrimp zucchini!
Grill the prawns
Once your shrimp are tossed in the oil, honey, pepper, and salt, place them directly on the grill. You want them to cook until they are nicely charred and opaque. Make sure to flip them halfway through the grill time. Shrimp have never tasted so good !!
