You will love this list of ingredients because it is full of protein, dairy-free, gluten-free AND free of refined sugar that is loaded with so many desserts! Here are the ingredients you need to collect to achieve this gluten-free rhubarb crumbs:

  • Tapioca starch
  • Almond flour
  • Almond chips
  • Coconut sugar
  • pinch of salt
  • Ghee
  • Fresh strawberries, roughly chopped
  • Fresh rhubarb, sliced

  1. All-purpose flour: Instead of normal white flour, I used a combination of tapioca starch and almond flour, which makes this crispy protein rich and gluten-free!
  2. White sugar: I chose coconut sugar instead, a less refined and more natural sweetener!
  3. Butter: I opted out and chose ghee instead to make it milk free and vegan! Vegan butter is also a great option.

How to make gluten-free rhubarb crispy

Whisk

Set your oven to 350 degrees Fahrenheit and let it preheat completely. Whisk the water and tapioca starch in a medium-sized saucepan, then add the honey and whisk again until everything is well mixed. Bring the mixture to a boil over medium heat, stirring occasionally. Once it starts to boil, stir constantly for 3-5 minutes or until thickened. As soon as it is thick, remove it from the heat and stir in the vanilla.

Mix

While the sauce is cooking, stir half a cup and 2 tablespoons of tapioca with half a cup of almond flour, almonds, coconut sugar, and a pinch of salt. Add the melted ghee and stir it with your hands until the mixture is crumbly. Press ⅔ of the crumbs firmly into a 9 x 13 baking pan.

In a large bowl, mix the rhubarb and strawberries with the remaining 1 tablespoon of tapioca and almond flour until everything is well covered. Spread evenly over the crumb layer.

Pour the honey syrup evenly over all the fruits and make sure that everything is covered. Finally sprinkle the remaining crumbs over it and make sure there are some large pieces.

Place the pan in the oven and bake until golden and bubbly. This should take about 30 minutes.

For the crispy:

  • 1/2 Cup + 3 tbsp Tapioca starch (83 g) divided *
  • 1/2 Cup + 1 tbsp Almond flour, divided (57g)
  • 1/2 Cup Almond chips (45 g)
  • 1/4 Cup + 2 tbsp Coconut sugar, packed up
  • pinch of salt
  • 3 1/2 tablespoon Ghee, melted (or vegan butter)
  • 1 Cup Fresh strawberries, roughly chopped (130g)
  • 1 Cup Fresh rhubarb, sliced ​​(100g)

  1. Preheat your oven to 350 degrees.

  7. Pour the honey syrup evenly over the fruits, making sure that everything is covered. Finally sprinkle the top with the remaining crumbs and make sure that some large, chunky crumbs remain.

  8. Bake until golden brown and bubbly, about 30 minutes. OPTIONAL: Fry for 2-4 minutes and watch carefully how it burns quickly. Let cool for 20-30 minutes
