I love a nice, thick slice of bread for breakfast – it's just so satisfying and filling in the morning. Do I feel like something?   • Melted coconut oil
  • Vanilla extract
  • Carrot, grated and tightly packed
  • Pecans, roughly chopped

How to make carrot bread

This Carrot bread recipe is simple and tasty – a common topic on the blog if you haven't noticed! I am concerned with simple steps and a delicious result. When you're ready, you're good to go!

Prepare

Set your oven to 375 degrees Fahrenheit and let it preheat completely. Line the bottom of an 8-inch loaf pan with parchment paper and set aside.

Whisk

Put the flour, cinnamon, baking powder, nutmeg and salt in a medium-sized bowl and stir well. In a separate large bowl, whisk the remaining ingredients except for the carrots and pecans.

Combine

Stir the dry ingredients into the wet ingredients until they are ONLY combined. Be careful not to mix too much. Next, carefully fold in the carrots and pecans.

Pour into the prepared pan and sprinkle with additional chopped pecans if desired. Bake in the oven until an inserted toothpick comes out clean. This should take approximately 47-55 minutes.

Enjoy

Let the loaf COMPLETELY cool in the pan. Run a knife along the edges and take it out by turning the pan over. Cut on a cutting board and gobble it up!

How to store quick bread

I love baking quick bread for a few reasons, some of which I've outlined above. Are they packed with nutrients, are they easy to conjure, are they a quick breakfast for the busy mornings or snacks on the go and best of all? They taste so delicious! They also freeze very well and thaw quickly. So when I make my way, I often bake a few for later! I recommend keeping it in plastic wrap in the fridge for up to a week. If you want to freeze it for the future, I recommend cutting it in portions and then freezing the slices between parchment paper or each slice in its own Ziploc bag.

This healthy carrot bread is made from whole wheat flour, but you would never know! It is moist, tender and full of carrots! A must!

  • 1 tablespoon cinnamon
  • 1 tablespoon baking powder
  • 1/2 TL Ground nutmeg
  • 1/2 TL salt
  • 2 eggs
  • 1 Cup Coconut sugar
  • 2/3 Cup Crushed pineapple, drained
  • 1/2 Cup Kalona Supernatural Vanilla Kefir
  • 1/4 Cup Coconut oil, melted
  • 2 1/2 TL Vanilla extract
  • 1 Cup Carrot, Peeled, grated and tightly packed
  • 1/2 Cup Pecans, Roughly chopped + more topping (optional)

  1. Preheat your oven to 375 degrees and place parchment paper on the bottom of an 8-inch loaf pan.

  2. Whisk the flour, cinnamon, baking powder and salt in a medium bowl.

  3. In a separate large bowl, whisk the remaining ingredients apart from the carrot and pecans.

  4. Add the dry ingredients to the wet ingredients and whisk until they are just mixed. Fold in the carrots and pecans.

  5. Pour into the pan and add more pecans if desired.

  6. Bake until a toothpick comes out clean in the middle and the top is brown for 47-55 minutes.

  7. Allow to cool completely in the pan.

  8. Put a sharp knife around the edges of the cooled pan, place it on a cutting board and cut it into slices and REMOVE it!
