PIN Healthy Carrot Bread

I'm not even going to talk around the bush.

You know I love cake for breakfast. ESPECIALLY carrot cake. She and I went a few times with carrot cake overnight, instant pot french toast casserole carrot cake, and healthy gluten-free carrot cake muffins at the carrot cake for breakfast watch

But do you know what was missing on our tour of this block? KEFIR.

Kefir magic

Awww yah! The delicious, creamy, probiotic goodness of Kalona Supernatural Kefir is BACK and it seems.

Given that we also took care of the kefir pastry breakfast block with healthy gluten-free chocolate chip muffins and healthy PB&J breakfast bars with soft oatmeal, it was only time to combine the two.

Kefir is an amazing ingredient to really pump up this bread because it looks like buttermilk (like in the blueberry kefir pancakes) and it makes the bread super moist and has a nice domed top!

Not to mention that Kalona Supernatural Kefir is made from high quality milk from happy, grass-fed cows and is not genetically modified. This is just the icing on the cake on this frosting-free carrot cake bread!

Is healthy carrot bread a good breakfast bread?

I love a nice, thick slice of bread for breakfast – it's just so satisfying and filling in the morning. Do I feel like something? Vegan gluten-free banana bread or green cranberry pistachio bread, it ALWAYS hits the point, and that Healthy carrot cake bread is no exception! Because of the protein in the nuts, the sweetness of the pineapple and the carrots, the health benefits of kefir and the better ingredient changes for me like coconut sugar and coconut oil, it is a FAB choice for breakfast!

How to make carrot bread

This Carrot bread recipe is simple and tasty – a common topic on the blog if you haven't noticed! I am concerned with simple steps and a delicious result. When you're ready, you're good to go!

Set your oven to 375 degrees Fahrenheit and let it preheat completely. Line the bottom of an 8-inch loaf pan with parchment paper and set aside.

Put the flour, cinnamon, baking powder, nutmeg and salt in a medium-sized bowl and stir well. In a separate large bowl, whisk the remaining ingredients except for the carrots and pecans.

Stir the dry ingredients into the wet ingredients until they are ONLY combined. Be careful not to mix too much. Next, carefully fold in the carrots and pecans.

to bake

Pour into the prepared pan and sprinkle with additional chopped pecans if desired. Bake in the oven until an inserted toothpick comes out clean. This should take approximately 47-55 minutes.

Let the loaf COMPLETELY cool in the pan. Run a knife along the edges and take it out by turning the pan over. Cut on a cutting board and gobble it up!

How to store quick bread

I love baking quick bread for a few reasons, some of which I've outlined above. Are they packed with nutrients, are they easy to conjure, are they a quick breakfast for the busy mornings or snacks on the go and best of all? They taste so delicious! They also freeze very well and thaw quickly. So when I make my way, I often bake a few for later! I recommend keeping it in plastic wrap in the fridge for up to a week. If you want to freeze it for the future, I recommend cutting it in portions and then freezing the slices between parchment paper or each slice in its own Ziploc bag.
