PEN Air Fryer coconut shrimp

Would you judge me if I said that this is the first time in my life that I have coconut shrimp?

It's just like the sweet potato casserole, gluten-free cookies AND pecan pie. We just didn't eat these things when we grew up in Canada and then I moved to the States and they're EVERYWHERE!

Since I'm almost 30 years old, I decided it was time to fix this lack of coconut shrimp.

Since you know I LOVE my air fryer and she made the crispy fried fish, I thought it would be the perfect trip into the world of coconut shrimp and boy-oh-boy, let me just say: I was right.

Crunchy and crispy goodness

We all love fried goodness, you just can't deny that! BUT what if I told you that you can still have all this crunch, all this crispy goodness without deep frying? Yes, I said that you can have everything! Just like mine Air fryer chicken nuggets and air fryer buffalo cauliflower, THIS Coconut shrimp air fryer has all this crispy, crispy goodness without all the oil!

Swaps against Air Fryer Panko Shrimp

Yes, that is the truth! This Air fryer fried shrimp is comparable and, in my opinion, just as good as the fried version you know and love! I will describe some alternatives that I have used that are more suitable for you to make this shrimp:

  • Oil: Instead of the traditional oil used in frying and deep frying, I used my air fryer! It uses air to crisp and "roast" the food and is much healthier for you too!
  • Panko: If you want to make this recipe gluten free, you can also use gluten free panko as it works great too!

Air Fryer Coconut Shrimp Ingredients

Now that we know how crispy, how crispy, how AMAZING these shrimp will be, let's collect our ingredients and make it happen! To do that Air fryer breaded shrimp, you will need:

  • Large raw prawns, tails on and gutted
  • White wholemeal flour
  • egg
  • Panko
  • Unsweetened coconut flakes
  • salt
  • Sweet Thai chilli sauce for dipping

How to make Air Fryer Coconut Shrimp

Remove

Remove the peel from the shrimp and leave the tail on. Carefully pat the shrimp dry with a paper towel and then sprinkle them evenly with salt.

Prepare

Put the flour on a large plate. Put the egg in a small bowl. Mix the panko and coconut flakes together and place them on a separate large plate with a rim.

Hold the tail of the shrimp, dip it in flour, then in egg and gently brush it with the mixture of breadcrumbs and coconut. Place it in the mesh basket of your air fryer. Repeat with all remaining shrimp and leave some space between each piece in the air fryer. Sprinkle generously with salt.

cook

Spray the shrimp tips with avocado oil spray and cook until they are opaque and pink. Turn them over once in the middle of your cooking time.

Enjoy

Dip into the Thai Chili Sauce or any other sauce you want and DISCOVER!

How long to cook shrimp in the air fryer

You want to cook your shrimp in your air fryer at 400 degrees Fahrenheit. I have found that the perfect degree of cooking is around 3-4 minutes per side and is turned over once! So quick, so easy and so tasty!

Diving or not diving?

This delicious shrimp is aromatic and delicious in itself, but if you enjoy diving, I recommend the sweet Thai chili dip sauce. The avocado dip From my Vegan buffalo patties would also be a fun way to spice it up a bit!

Air Fryer coconut shrimp

This simple Air Fryer Coconut Shrimp is just as crispy as you expect, but without frying! A healthy side or dinner with a gluten-free option!

Servings 4th People as a starter

ingredients

  • 8th oz Big raw shrimp, Tail on and deveined
  • 2nd tablespoon White wholemeal flour
  • 1 egg
  • 6 tablespoon Panko
  • 6 tablespoon Unsweetened coconut flakes
  • salt
  • Thai sweet chili sauce, for immersion

  1. Remove the shell from the shrimp, leave the tail on and gently pat the shrimp dry with a paper towel. Sprinkle with salt.

  2. Place the flour in a flat, rimmed plate. Place the egg in a small bowl and mix the panko and coconut in a separate flat plate with a rim.

  3. Hold the tail of the shrimp and dip the flour. Then dip into the egg and shake off the excess. Finally, dip the shrimp in the panko mixture, coat them well and place them in the mesh basket of your air fryer. Repeat with all shrimps and leave some space between the shrimps in the basket. Season again generously with salt.

  4. Spray the tips with avocado oil spray and cook at 400 degrees for 3 minutes. Turn the shrimp and cook for another 3-4 minutes until pink and opaque.

  5. Dip in sauce and DEVOUR!
