Especially grilled chicken with cool, unique flavors. Don't get me wrong, I love a simple keto grilled chicken marinade and everything, but I'd much rather eat Thai grilled chicken OR fill a simple chicken with FRUIT.

Is it just me or do peaches and strawberries get all the PR in summer but nectarines don't get anything? Nevertheless, they are one of the most delicious summer fruits ever.

And then grill? OH MY GOSH, you will make this food on rep-EAT!

Is fruit salsa sweeter than normal salsa?

SALSA BABY. It's such a fresh, delicious side to a big old bowl of corn chips! One thing I love about beating a lot of salsa is that you can be creative with it by using ALL the colors, ALL the flavors and ALL the vegetables your heart desires. But did you know that it doesn't have to stop here? That's right folks – today I'm going to introduce you to some incredibly tasty ones fresh fruit salsa that will rock your world. Although Salsa fruits can be sweet, it is not * too * sweet because it uses vinegar and goat cheese to balance sweet, sour and salty!

I'm serious when I say you will love this fruity salsa, and that's not all this recipe has to offer! Add a delicious chicken, cook it just right, and name it a meal! This is the PERFECT recipe for a spring or summer meal on the deck or in the garden! Let's round off our ingredients and cook!

For the chicken:

  • balsamic vinegar

  • Nectarines

How to make fruit salsa recipe from scratch?

Marinate

In a large, microwave-safe bowl, add all of the ingredients for the chicken (except the chicken breast). Heat for 30 seconds to 1 minute or until the honey has dissolved. Whisk until everything is well incorporated. Add the chicken breast and coat it well. Cover with plastic wrap and leave in the fridge for at least 1 hour or overnight.

When you're ready to cook the chicken breast, preheat your grill over medium heat for 10 minutes. Place the chicken breast on the grill and cook for 5-7 minutes on each side until the inside temperature reaches 165 degrees Fahrenheit. Let it rest for 5 minutes.

While your chicken is cooking, set your oven to 400 degrees. Place the almonds on a small pan and put them in the oven to roast for a few minutes until golden brown. Be sure to watch them so they don't burn! Let cool for 5 minutes.

Do the salsa

Place all salsa ingredients except goat cheese and almonds in a bowl and stir. Next, crush the almonds over it and add the salt, then gently stir in the goat cheese so that it doesn't melt everywhere.

I'm a big fan of food preparation or duplicating a recipe to keep something for later! The freezer is a fantastic way to keep food good for a long time and then defrost when you are ready to eat! When it comes to this salsa, the best option is to serve it fresh, as the textures can be changed by freezing and the fruits can become mushy. However, the taste remains! I recommend mixing this salsa a little in the food processor after thawing if you want to freeze it!

  • 6 tablespoon Goat cheese, crumbled
